Carmel Almond Popcorn

  1. Preheat oven to 250F Fahrenheit
  2. Melt butter in a medium sized saucepan
  3. Add brown sugar, corn syrup, and salt
  4. Bring mixture to a boil, stirring constantly
  5. Remove from heat, and add baking soda and vanilla extract
  6. Stir until smooth
  7. Add almonds to pan and stir till all are covered
  8. Pour sugar and almond mixture over popcorn in a large bowl
  9. Stir until popcorn is well coated, and spread out on a large baking pan
  10. Bake for 1 hour, stirring popcorn and almonds every 10 minutes
  11. Remove from oven, and let cool completely
  12. If desired, drizzle melted chocolate chips over popcorn clusters
