Macrobiotic Soy Hamburger Patties
- 200 grams Boiled soy beans
- 1/2 Onion
- 2 Dried shiitake mushrooms (rehydrate with water)
- 20 grams Peanuts (or you can omit them)
- 1 small piece Ginger
- 1 dash Salt and pepper
- 2 leaves Dried sage
- 1 dash Nutmeg
- 1 tsp Japanese-style Worcestershire sauce
- 1 tsp Ketchup
- 1 tbsp Katakuriko
- Mince the rehydrated shiitake mushroom, roughly-cut onion, and peanuts in a food processor.
- Mince the garlic and cook in a frying pan with oil.
- Once fragrant, add Step 1 and cook.
- Flavor with salt and pepper.
- Mince the boiled soy beans in the food processor.
- Combine the soy beans, the cooked vegetables, a little salt and pepper, nutmeg, sage, Worcestershire sauce, ketchup, and the katakuriko in a bowl and mix.
- Make into oval shapes and cook in a frying pan for 3 to 4 minutes until browned.
- Close with a lid and try not to move them as much as possible.
- How to make the sauce; not listed in the ingredients: Mix 2 tablespoons each of ketchup and Worcestershire sauce in the frying pan and heat.
