Angel Hair Pasta with Grilled Steak, Parmesan Topped with Poached Eggs
- 1/4 boxes Vermicelli (angel Hair) Pasta
- 1 teaspoon Extra Virgin Olive Oil
- 1 pinch Salt and Pepper
- 2 whole Eggs
- 2 Tablespoons Shaved Parmesan
- 1 piece Ny Strip Steak
- Season steak with salt and pepper.
- Set grill pan on high.
- Cook steak for roughly 3 minutes per side.
- Slice.
- Cook pasta per instructions.
- Drain but SAVE the pasta water.
- Pour pasta water back in saucepan and poach eggs for 30 seconds.
- Combine pasta, sliced steak, and parmesan in a bowl.
- Drizzle pasta with extra virgin olive oil, salt & pepper.
- Toss.
- Top off with poached egg.
- Great Sunday brunch dish breakfast and lunch at the same time!
