Sparkling Lemonade

  1. In a saucepan, heat mint, fresh lemon juice, sugar, and chopped peeled fresh ginger to boiling, stirring to dissolve the sugar.
  2. Cool to room temperature.
  3. Strain syrup through sieve; discard solids.
  4. For each glass, mix 2 tablespoons syrup with 3/4 cup seltzer.
