Sparkling Lemonade
- 1 c. mint
- 1 c. fresh lemon juice
- 1 c. sugar
- 1/2 c. chopped peeled fresh ginger
- 9 c. Seltzer
- In a saucepan, heat mint, fresh lemon juice, sugar, and chopped peeled fresh ginger to boiling, stirring to dissolve the sugar.
- Cool to room temperature.
- Strain syrup through sieve; discard solids.
- For each glass, mix 2 tablespoons syrup with 3/4 cup seltzer.
