Bourbon Sweet Potato Puff Recipe

- 6 med -sized cooked sweet potatoes or possibly 1 can (40-ounces) sweet potatoes, liquid removed
- 1/4 c. (1/2 stick) unsalted butter or possibly margarine, melted
- 3 x Large eggs
- 1/2 c. firmly packed brown sugar
- 3/4 tsp grnd cinnamon
- 1/4 tsp grnd cloves
- 1/4 tsp grnd nutmeg
- 2 tsp grated orange rind
- 1/4 c. bourbon
- 1 pkt (10-ounces) marshmallows
- Preheat oven to 3500F.
- Butter a 1-1/2-qt souffle dish or possibly casserole.
- Peel cooked sweet potatoes.
- In large bowl, combine potatoes with remaining ingredients except marshmallows.
- With electric mixer or possibly food processor, beat or possibly process till fluffy.
- Turn mix into prepared dish or possibly casserole; arrange marshmallows over top.
- Bake 20 min or possibly till marshmallows are puffed and golden brown.
