Caldeirada (Layered Vegetables And Fish) Recipe

  1. Caldeirada is a well known Portuguese dish that, I seem to remember, uses a lot of shellfish.
  2. Here is a Goan version.
  3. Layer a few slices of onion and tomato in a pan.
  4. Place 1/2 the fish over onions an tomato.
  5. Add in another layer of onion/tomato and then another layer of fish.
  6. Sprinkle with the garlic and ginger.
  7. Scatter over the remaining onion and tomato.
  8. Pour the oil, vinegar and about 6-7 tbs water over the fish.
  9. add in salt is desired.
  10. Cook on a low heat till fish is half done.
  11. Sprinkle turmeric over fish.
  12. Add in peppers/chillies.
  13. Cook till fish is tender.
