Caldeirada (Layered Vegetables And Fish) Recipe
- 10 lrg Mackerel or possibly sardines, cleaned and head removed
- 4 lrg Onions, sliced
- 2 lrg Tomatoes, sliced
- 1 head garlic, finely sliced
- 1 x 1-inch piece of ginger, finely sliced
- 3 Tbsp. Light oil
- 1 Tbsp. Vinegar
- 1/4 tsp Grnd turmeric
- 4 x Bell peppers (red/green) and or possibly green chillies Salt to taste
- Caldeirada is a well known Portuguese dish that, I seem to remember, uses a lot of shellfish.
- Here is a Goan version.
- Layer a few slices of onion and tomato in a pan.
- Place 1/2 the fish over onions an tomato.
- Add in another layer of onion/tomato and then another layer of fish.
- Sprinkle with the garlic and ginger.
- Scatter over the remaining onion and tomato.
- Pour the oil, vinegar and about 6-7 tbs water over the fish.
- add in salt is desired.
- Cook on a low heat till fish is half done.
- Sprinkle turmeric over fish.
- Add in peppers/chillies.
- Cook till fish is tender.
