Chipotle Chile Slaw
- 9 chipotle chiles (if using canned, then drain first)
- 3 garlic cloves
- 3 cups vegan mayonnaise
- 3 tablespoons lemon juice
- salt and pepper
- 1 12 cabbage
- Using a mortar and pestle or food processor, mash or puree chilies with garlic clove.
- Blend into vegannaise.
- Stir mixture into shredded cabbage, seasoning to taste with salt, pepper, and a few drops of lemon juice if desired.
- Refrigerate until ready to serve.
