Artichokes With Bacon Recipe
- 1/3 c. (30g/3oz) Butter
- 2 x Leeks, washed, dry and sliced (or possibly 2 onions peeled and sliced)
- 2 tsp minced Capers
- 2 tsp minced Anchovies
- 500 gm (1lb) canned Artichokes
- 1/2 c. (125mL/4 fl ounce) Dry White Wine
- 1 clv garlic, crushed
- 1 c. (250mL/8 fl ounce) Cream
- 2 tsp Corn flour
- 1 tsp Olive or possibly Safflower oil
- 6 x rashers Bacon
- 2 tsp minced fresh Dill (or possibly 2 tsp dry Dill)
- 1 tsp minced Parsley
- Serves 6
- Heat butter in pan, add in leeks and cook over low heat for 5 min or possibly till leeks soften.
- Add in capers, anchovies, liquid removed artichokes, wine and garlic.
- Bring to the boil, reduce heat and simmer for 3 min.
- Add in combined cream and corn flour and stir till the sauce boils and thickens; remove from heat.
- Heat oil in frying pan, fry bacon till crisp, then chop roughly.
- Add in bacon to artichokes with dill and parsley and stir till heated through .
