Very Filling Minestrone
- 1 large Onion
- 2 medium Potatoes
- 1/3 to 1/2 Carrot
- 1 as much (to taste) Vegetables (to taste)
- 1 Bacon (block bacon if possible)
- 2 tbsp Olive oil
- 1 Salt and pepper
- 1 1/2 to 2 teaspoons Grated garlic
- 1 liter Water
- 1 Bay leaf
- 2 Soup stock cubes
- 1 tsp Salt
- 1 can Tomato puree (or tomato sauce)
- 3 tbsp Tomato ketchup
- 1 tbsp Okonomiyaki sauce
- Cut the vegetables into small dices.
- Spring cabbage is nice in the spring.
- Add the garlic to a generous amount of olive oil.
- Start sauteing the vegetables, starting with the harder ones and adding the softer ones later.
- Season the vegetables properly with salt and pepper at this stage!
- When the vegetables are more or less cooked...add enough water to cover as well as the ingredients, and simmer!
- Simmer for a while, skim off any scum.
- Add the ingredents and keep simmering over low heat.
- (About 30 minutes.)
- When the vegetables are tender, the soup is done!!
- It has lots of vegetables, so the soup alone will fill you up.
- We enjoyed the soup as 'soup pasta' the next day.
- Top with cheese of your choice!
