Simply Potatoes, Vegetables & Shrimp Fettuccine

  1. Saute garlic and green onion in olive oil.
  2. Add chicken broth, sliced mushrooms, heavy cream fresh parsley, spinach, peas, shredded cheddar cheese, black pepper, and salt.
  3. Cook on medium / low heat until vegetables are tender and then stir in entire package of Simple Potatoes Traditional Mashed Potatoes.
  4. Add shrimp and cook an additional 5 to 7 minutes until the shrimp are curled and tender.
  5. DO NOT OVER COOK or shrimp with become tough.
  6. Bring a large pot of lightly salted water to a boil.
  7. Add fettuccine and cook for 8 to 10 minutes or until al dente; and then drain.
  8. Toss fettuccine in the shrimp sauce.
  9. Top with grated Parmesan cheese.
