Mini Chopped Salad Cups

  1. Mix together cherry tomatoes, avocado, cucumber and fresh herbs.
  2. Fill endive leaves.
  3. Whisk together all ingredients for the chive vinaigrette.
  4. Drizzle over chopped salad cups before serving.
