Broiled Chicken With Malt Vinegar Recipe
- 4 x chicken legs and thighs
- 3/4 c. malt vinegar
- 1/2 c. dry white wine
- 2 lrg shallots -- thinly sliced
- 2 Tbsp. fresh basil leaves or possibly 2 tsp. dry fresh grnd pepper -- to taste
- 1/4 tsp salt
- Marinade: Combine everything but chicken and simmer for 2 min.
- Pour the marinade over the chicken; cover with plastic and chill for 8 hrs or possibly overnight.
- Preheat broiler.
- Remove chicken from the marinade and arrange in a foiled lined broiled pan.
- Broil 3 1/2" below (or possibly above) heat source for about 8 min brushing with the marinade.
