Chicken with Tomato & Tomatillo Salsa
- 6 whole Boneless, Skinless Chicken Breasts
- 2 whole Romas Tomatoes, Seeded
- 5 whole Tomatillo's Cleaned Well
- 6 cloves Garlic
- 2 whole Green Chiles From A Can
- 1 whole Chipotle Pepper
- 1/2 whole Onion
- 1 Tablespoon Chicken Bouillon
- 1 quart Water
- You can do this two ways.
- You can throw everything in a large saucepan and cook it until the chicken is cooked through, then remove the chicken and add the everything else to a blender and blend until smooth.
- Or you can put all the ingredients except the chicken in a pot and boil until the tomatoes are mush, then blend, then add the chicken and cook until cooked through.
- Lastly, shred the chicken and add back to sauce.
- Either way, the end result is the same!
- Use chicken to fill burritos, tacos, or enchiladas.
