Boston Baked Beans (Tomato Sauce) Recipe
- 2 lbs. Smith's pea beans
- 1/2 teaspoon soda
- 1/2 pound fat salt pork, scalded
- 1 teaspoon mustard
- 2 teaspoon brown sugar
- Salt and pepper to taste
- 1/2 cupful tomato juice
- 2 tbsp. molasses
- 2 tbsp. onion, chopped
- Wash beans thoroughly.
- Soak overnight in water to cover.
- Wash and parboil with the soda in boiling water till tender.
- Rinse, place in bean pot, fold in all seasonings and bury the pork at the bottom.
- Cover with boiling water, put on lid and cook very slowly for 6 hrs.
- Renew water as needed (important).
- During the last two hrs, draw the pork to the surface, score and let brown.
