Sweet Potato Balls

• 2 cups cold mashed sweet potatoes
• 1 egg, lightly beaten
• 4 tbsp. butter
• margarine, melted, divided
• 1 tbsp. whipping cream
• 1/2 tsp. salt
• 1/4 tsp. ground nutmeg
• 6 lg. marshmallows
• 1-1/2 cup crushed cornflakes

1. Mix sweet potatoes, egg, 2 tb butter, cream, salt and nutmeg.
2. Divide into 6 portions.
3. Pat each portion around a marshmallow.
4. Roll in remaining butter and then in cornflakes.
5. Place in a greased 9-inch pie plate.
6. Bake at 400F for 15 mintues.
