High Protein Strawberry Banana Pancakes
- 1 ripe banana, cut up
- 1 cup strawberry yogurt (1 used 3 - 6oz containers so theres bit more then a cup)
- 2 eggs
- 1 cup cottage cheese
- 1 scoop vanilla protein powder (may use banana or natural flavor)
- 14 teaspoon baking soda
- 14 teaspoon baking powder
- 18 teaspoon salt
- 3 teaspoons Splenda sugar substitute
- 2 cups quick oats
- 14 cup Greek yogurt
- 3 -4 teaspoons sugar free strawberry jelly
- With a hand mixer mix together the banana, yogurt, eggs and cottage cheese.
- Add to the wet mixture the protein powder, baking soda, baking powder, salt, splenda and oats.
- Allow the batter to sit 10 minutes (I useually do this while letting my griddle heat up).
- Pour 1/4 cup of the batter on the griddle spreading it.
- Fry the pancakes 3-4 minutes.
- Carefully flip the pancakes over and fry another 3-4 minutes.
- Serve them with a mix of greek yogurt and jelly.
