Baked Potato Soup

  1. preheat oven to 400F
  2. bake potatoes until done.
  3. pull out and let cool
  4. cut potatoes in half lengthwise.
  5. scoop out pulp and set aside.
  6. discard skins
  7. melt butter in big pot over low heat.
  8. Add flour, stirring until smooth.
  9. cook over medium heat, stirring constantly until thick and bubbly.
  10. Add potato pulp, milk, salt, pepper, 2 TBSP green onion, 1/2 cup bacon and 1 cup cheese.
  11. Cook until thoroughly heated.
  12. Stir in sour cream.
  13. Add extra milk if necessary for desired thickness.
  14. Serve with remaining onion, bacon and cheese
