Lobster Newburg Crepes Recipe

  1. Make classic crepes and set aside.
  2. Heat butter in top of double boiler over simmering water.
  3. Stir in flour and cook 2 to 3 min.
  4. Gradually add in cream and lowfat milk.
  5. Cook, stirring till sauce thickens.
  6. Mix a little of the warm cream mix into egg yolks.
  7. Carefully stir egg yolk mix into sauce.
  8. Blend in sherry, salt and pepper.
  9. Add in lobster and heat through.
  10. Fill crepes, reserving some of the sauce to top the crepes.
  11. Roll and place in buttered oven-proof serving dishes.
  12. Top with sauce.
  13. Place in 350 degree oven 10 to 15 min or possibly till heated through.
  14. Makes 6 servings.
