Lobster Newburg Crepes Recipe
- 12 classic crepes
- 2 tbsp. butter
- 1/4 c. flour
- 1 1/2 c. heavy cream
- 1/2 c. lowfat milk
- 3 egg yolks
- 1/4 c. dry sherry
- Salt and pepper
- 2 1/2 c. cooked lobster
- Make classic crepes and set aside.
- Heat butter in top of double boiler over simmering water.
- Stir in flour and cook 2 to 3 min.
- Gradually add in cream and lowfat milk.
- Cook, stirring till sauce thickens.
- Mix a little of the warm cream mix into egg yolks.
- Carefully stir egg yolk mix into sauce.
- Blend in sherry, salt and pepper.
- Add in lobster and heat through.
- Fill crepes, reserving some of the sauce to top the crepes.
- Roll and place in buttered oven-proof serving dishes.
- Top with sauce.
- Place in 350 degree oven 10 to 15 min or possibly till heated through.
- Makes 6 servings.
