Little Italian Stuffed Peppers

  1. Lightly toast the bread crumbs in a preheated oven at 350 degrees for 12 minutes.
  2. Set aside to cool.
  3. Mix bread crumbs, cheese and herbs together in a mixing bowl.
  4. Stir in the olive oil.
  5. Adjust salt to taste.
  6. Stuff the peppers with the bread mix and put the tops back on.
  7. Secure the tops with a toothpick if desired.
  8. Brush the peppers with a little olive oil.
  9. Bake for 6 minutes and then turn.
  10. Bake for about 6 more minutes or until soft and brown on the outside.
  11. Remove any toothpicks before you serve.
