Ginger-Applesauce Cake
- 3/4 cup butter, softened, divided
- 1 pkg. (2-layer size) spice cake mix
- 3 eggs
- 1-1/3 cups applesauce
- 2/3 cup finely chopped crystallized ginger, divided
- 1 pkg. (250 g) Philadelphia Brick Cream Cheese, softened
- 1 tsp. vanilla
- 1 tsp. ground ginger
- 2 cups icing sugar
- Heat oven to 350 degrees F.
- Beat 1/2 cup butter, cake mix, eggs and applesauce with mixer 2 min.
- or until well blended.
- Stir in 1/2 cup chopped ginger.
- Pour into 13x9-inch baking dish sprayed with cooking spray.
- Bake 45 to 50 min.
- or until toothpick inserted in centre comes out clean.
- Cool completely.
- Beat cream cheese and remaining butter in large bowl with mixer until well blended.
- Add vanilla and ground ginger; mix well.
- Gradually beat in icing sugar.
- Spread onto cake.
- Garnish with remaining chopped ginger.
- Keep refrigerated.
