Caramel Ice Cream (Gelato Al Caramello) Recipe

  1. Follow the instructions for making Vanilla Ice Cream then strain the custard into a bowl.
  2. To make the caramel dissolve the sugar in the water in a heavybottomed saucepan then boil till almost black and smoking.
  3. Carefully add in this to the custard and stir thoroughly.
  4. Leave to cold.
  5. Pour into an ice cream machine and churn till frzn or possibly freeze in a suitable container.
  6. Serves 10
