Dad'S Famous Cream Of Broccoli Soup
- 4 stems broccoli, cut off bottom 2 inches
- 2 sticks butter or margarine
- 2 tsp. lemon juice
- 2 small onions, cut up
- 3/4 c. flour
- 7 c. water
- 6 bouillon cubes, chicken flavor
- 2 tsp. salt
- 1/2 tsp. pepper
- 1 pt. whipping cream or heavy cream
- Cut up broccoli into small pieces.
- In a large saucepan boil broccoli until just tender, drain and remove broccoli from saucepan.
- In same pan, melt 2 sticks butter and saute onions, add lemon juice.
- Slowly add flour until blended and cook 1 minute, stirring constantly.
- Gradually add water and bouillon cubes and cook while stirring until mixture is thickened.
- Add 1/3 of the broccoli to this mixture and blend in blender.
- Repeat until all the mix has been blended.
- Return blended mix to pan, add salt, pepper, cream and remaining broccoli.
- Heat to boiling and serve.
