Beef Burritos

  1. Brown ground beef and drain off any excess fat.
  2. Season with 1/2 teaspoon salt and 1/2 tsp black pepper and 1 teaspoons of ground cumin.
  3. Add 1 1/2 cups chuncky salsa.
  4. I prefer Pace Medium.
  5. Stir together and add 4 oz (1/2 bar) Neufchatel Cream Cheese.
  6. Stir until melted in and reduce over low heat until thick and creamy.
  7. Place about 1/3 cup burrito mixture onto a warmed flour tortilla.
  8. Top with fresh chopped cilantro.
  9. Fold in bottom then sides, rolling into a tight pouch;leaving an opening at the top.
  10. Makes 6 good sized burritos.
  11. Enjoy!
