Zucchini Carpaccio

  1. Slice zucchini very thinly with a veggie slicer.
  2. Place zucchinis on a big plate from the outside towards the inside or decorate as desired.
  3. Sprinkle capers over zucchinis
  4. Slice mushrooms and onion thinly and spread over zucchinis
  5. On a small bowl, squeeze lemon juice of the 2 lemons.
  6. Mix olive oil with the lemon juice
  7. Add salt and pepper to taste
  8. Pour lemon mixture over zucchinis, trying to wet all of them.
  9. Leave zucchinis with lemon for around 10 minutes.
  10. Voila!!
