Zucchini Carpaccio
- 1 zucchinis
- 10 fresh mushrooms
- 1/2 red onion
- 1 Capers (as desired)
- 2 lemons
- 1 salt
- 1 pepper
- 1 tbsp olive oil
- Slice zucchini very thinly with a veggie slicer.
- Place zucchinis on a big plate from the outside towards the inside or decorate as desired.
- Sprinkle capers over zucchinis
- Slice mushrooms and onion thinly and spread over zucchinis
- On a small bowl, squeeze lemon juice of the 2 lemons.
- Mix olive oil with the lemon juice
- Add salt and pepper to taste
- Pour lemon mixture over zucchinis, trying to wet all of them.
- Leave zucchinis with lemon for around 10 minutes.
- Voila!!
