Shaved Fennel Salad
- 10 ounces arugula leaves
- 2 oranges, segmented
- 1 small bulb fennel, thinly sliced
- 3 tablespoons olive oil
- 1 lemon, juiced
- Kosher salt and freshly ground black pepper
- In a large bowl, combine the arugula, oranges and fennel.
- Add the olive oil and lemon juice and toss to combine.
- Season with salt and pepper.
- Serve immediately.
