Curry Sauce

  1. Peel the apple and cut it into quarters.
  2. Cut away and discard the stem ends and the core.
  3. Cut each quarter into 1/4-inch cubes.
  4. Heat the butter in a saucepan and add the shallots and curry powder.
  5. Cook, stirring, about 1 minute.
  6. Add the apple and stir.
  7. Add the broth and tomato puree.
  8. Cook over moderately high heat about 3 minutes or until reduced to about 1 cup.
  9. Add the cream and cook about 2 minutes.
