Savory Spinach Diamonds

  1. Heat oil in medium skillet over medium heat.
  2. Add onions, cook and stir until soft and golden, 5 to 6 minutes.
  3. Stir in garlic; cook 30 seconds.
  4. Remove from heat.
  5. Squeeze spinach to remove excess moisture.
  6. Whisk eggs and milk.
  7. Stir in spinach, onion mixture and bread crumbs; mix well.
  8. Stir in cheeses.
  9. Add remaining ingredients; mix well.
  10. Place mixture in pan; spread evenly.
  11. Bake 40 minutes.
  12. Cool on wire rack.
  13. Serve slightly warm or at room temperature.
  14. To serve, cut diagonally into 2 to 3-inch diamonds.
  15. Makes about 40.
