Savory Spinach Diamonds
- 2 Tbsp. oil
- 1 c. finely chopped onions
- 1 clove garlic, minced
- 2 (10 oz.) pkg. frozen chopped spinach, thawed
- 4 large eggs, slightly beaten
- 1/2 c. milk
- 1 c. lightly packed fresh bread crumbs
- 2 c. (8 oz.) shredded Jack cheese
- 1 c. grated Parmesan cheese
- 1/4 lb. Italian salami, finely chopped (about 1 c.)
- 1/2 c. minced parsley
- 1/2 tsp. mixed Italian seasoning, crumbled
- 1/4 tsp. each sage and nutmeg
- Heat oil in medium skillet over medium heat.
- Add onions, cook and stir until soft and golden, 5 to 6 minutes.
- Stir in garlic; cook 30 seconds.
- Remove from heat.
- Squeeze spinach to remove excess moisture.
- Whisk eggs and milk.
- Stir in spinach, onion mixture and bread crumbs; mix well.
- Stir in cheeses.
- Add remaining ingredients; mix well.
- Place mixture in pan; spread evenly.
- Bake 40 minutes.
- Cool on wire rack.
- Serve slightly warm or at room temperature.
- To serve, cut diagonally into 2 to 3-inch diamonds.
- Makes about 40.
