Veggie-Lovers Casserole

  1. Preheat oven to 325F In a large skillet cook broccoli, squash, onion and carrots in oil over medium-high heat 5-7 minutes or until crisp-tender.
  2. In a small bowl, stir together mayonnaise and 1/2 cup of the cheese; stir into vegetables.
  3. Turn vegetable mixture into a lightly greased 2-quart casserole dish.
  4. In a small bowl, stir together breadcrumbs, paprika, salt, pepper and remaining 1/2 cup cheese; sprinkle over vegetables.
  5. Bake 20-30 minutes or until topping is lightly browned.
