Thai Chicken Calzones

  1. Marinate chicken breasts in the marinade ingredients for 1-3 hours prior to cooking.
  2. Bake or grill chicken breasts until internal temperature has reached 150-160 degrees (approximately 25 minutes).
  3. Cube cooked chicken into 1/2 pieces.
  4. Roll each dough piece into a ball, then using a rolling pin roll out into a thin 8 circle.
  5. Preheat oven to 425 degrees (F).
  6. Combine cooked chicken pieces, spinach, cilantro, shredded carrot, and shredded cheese.
  7. On each rolled-out dough circle, add approximately 1/2 cup chicken mixture.
  8. Lightly brush water to the edge of the circle.
  9. Fold dough over and pinch edges to seal.
  10. Lay calzones on a baking sheet (or 2) sprayed lightly with cooking spray.
  11. Bake for 15-20 minutes on middle rack, or until crust is lightly brown.
  12. Combine peanut sauce ingredients in a large saucepan over low heat.
  13. Simmer, stirring frequently, for approximately 10-15 minutes while calzones are baking.
  14. To serve: ladle 1/4 cup peanut sauce onto the top of each calzone.
