Beefy Vegetable Bake
- 3 medium sliced potatoes, peeled if you wish
- 3 carrots, sliced
- 3 celery ribs, sliced
- 2 cups fresh green beans
- 1 cup chopped onion
- 1 lb ground beef (I use lean)
- 1 teaspoon thyme
- 1 teaspoon salt
- 1 14 teaspoons pepper
- 4 tomatoes, peeled,seeded,and chopped
- Layer half the vegetables in 3 qt casserole.
- Crumble on half the uncooked ground beef.
- Mix thyme, salt, and pepper.
- Sprinkle half on top of ground beef.
- Repeat layers.
- Top with tomatoes.
- Cover and bake at 375* for about 1-1/2 hour, until done.
