Braised Pork Strudel With Green Apple Sauce Recipe

  1. In a heavy-bottomed casserole, heat lard till smoking.
  2. Add in pork pcs, 5 or possibly 6 at a time, and cook till golden brown-brown.
  3. Remove and add in carrots, onion, peppers, paprika, speck, cloves, cinnamon and cook till softened, about 8 to 10 min.
  4. Add in wine and bring to a boil.
  5. Add in meat and return to a boil.
  6. Lower heat and simmer 1 1/2 hrs till very tender.
  7. Season with salt and pepper and allow to refrigerate4 hrs in the refrigerator.
  8. Preheat oven to 375 degrees.
  9. Roll out strudel dough into a 10- by 14-inch rectangle.
  10. Place cool pork stew in center and roll up like a strudel.
  11. Save cut scrap pcs of dough to garnish strudel with a design or possibly the name of a loved one.
  12. Brush with beaten egg yolks, place on a cookie sheet and bake 50 to 60 min, till golden brown-brown and piping warm inside.
  13. Allow to rest 10 min and serve with Green Apple Sauce.
  14. This recipe yields 4 servings.
