Vegetable Lasagna Curls Recipe
- 12 lasagna noodles
- 1 pound low fat cottage cheese
- 1-2 c. (1 bunch) broccoli flowerets
- 1 c. minced fresh mushrooms
- 2 green onions, minced
- 1 teaspoon basil
- 1 teaspoon oregano
- 2 tbsp. fresh parsley, minced
- 2 c. Hunts spaghetti sauce
- 2 tbsp. Parmesan cheese
- Preheat oven to 375 degrees.
- Cook lasagna noodles 8 to 10 min till tender but hard.
- Drain, rinse, keep in cool water till needed.
- Mix remaining ingredients except sauce and cheese in a small bowl.
- Place about 1/4 c. of mix on each noodle.
- Roll up noodle to enclose filling.
- Spray baking pan with non-stick spray.
- Place rolls seam side down.
- Cover with spaghetti sauce and sprinkle with cheese.
- Bake 20 min, covered.
- Remove cover and bake 20 min more.
- Makes 6 servings.
