Burmese Curry and Rice
- 2 onions, diced coarsely
- 2 tablespoons butter
- 2 12 teaspoons curry powder
- 1 lb hamburger
- 15 ounces mixed vegetables
- 15 ounces tomatoes, diced
- 1 cup raw rice, cooked
- salt
- 13 head lettuce
- 1 tomatoes, large diced
- 12 cucumber, diced
- 2 cups potato chips
- 12 cup salted peanuts
- 12 cup coconut, flaked
- 2 bananas
- Dice the onions and fry gently in butter for a few minutes.
- Add curry and simmer till onions are almost done.
- Add hamburger and cook till done.
- Add mixed veggies and tomatoes and simmer for 30 minutes over low heat.
- Salt to taste.
- If more curry is needed, mix it with a little water before adding.
- Make a small salad with the lettuce, tomato and cucumber (amounts are general, use what is right for the # of people).
- Cut bananas in half and then again lengthwise.
- Lay out in buffet as follows: rice, curry mix, salad, crushed potato chips, peanuts, coconut, banana slice and lemon juice.
- Mound on plate in order, place a banana slice on either side and squeeze lemon juice on everything.
- Enjoy!
