Cherries Jubilee Duck Confit

  1. Saute onion in 2 tablespoons olive oil until caramelized.
  2. Refrigerate onion until cool.
  3. Drain macerated cherries reserving liquid.
  4. Mix 2 ounces cherry liquid, remaining olive oil, salt and pepper.
  5. Mix in the smoked duck and caramelized onion.
  6. Fill each wonton cup with duck mixture.
  7. Garnish with whole cherries.
