Capetown Fruit And Vegetable Curry Recipe

  1. Saute/fry the onions in the peanut oil for 10 min.
  2. Stir in the garlic, ginger & curry spices & continue to saute/fry, stirring constantly for 3 min.
  3. Add in the zucchini & water & stir well so which the spices will not stick to the pot.
  4. Cover & simmer for 10 min.
  5. Fold in the green beans, apple, peppers & dry apricots.
  6. Simmer gently, covered for about 30 min.
  7. Stir occasionally & add in a little more water if needed to prevent sticking.
  8. When the fruit & vegetables are quite tender, stir in the raisins, the conserve & the lemon juice.
  9. Taste & adjust to your liking if necessary.
  10. If you need it to be more spicy, add in more cayenne or possibly garam masala.
  11. If you want it sweeter, add in more conserve.
  12. Tarter, add in more lemon juice.
  13. Serve on a bed of rice, topped with nuts & banana.
