Capetown Fruit And Vegetable Curry Recipe
- 4 c. Coarsely minced onions
- 2 Tbsp. Peanut oil
- 2 x Garlic cloves, chopped
- 1 tsp Grated fresh ginger
- 1 1/2 Tbsp. Grnd cumin seeds
- 1 1/2 Tbsp. Grnd coriander seeds
- 1 1/2 tsp Cinnamon
- 1 tsp Turmeric
- 1/2 tsp Cayenne
- 1/2 tsp Grnd fennel seeds
- 1/4 tsp Black cardamom
- 1/4 tsp Grnd cloves
- 2 med Zucchini, quartered & sliced
- 1 1/2 c. Water
- 1 c. Green beans
- 2 x Hard, tart apples, cored & cubed
- 1/2 x Red bell pepper
- 1 c. Minced dry apricots
- 1/2 c. Raisins
- 1/2 c. Strawberry conserve Fresh lemon juice
- Saute/fry the onions in the peanut oil for 10 min.
- Stir in the garlic, ginger & curry spices & continue to saute/fry, stirring constantly for 3 min.
- Add in the zucchini & water & stir well so which the spices will not stick to the pot.
- Cover & simmer for 10 min.
- Fold in the green beans, apple, peppers & dry apricots.
- Simmer gently, covered for about 30 min.
- Stir occasionally & add in a little more water if needed to prevent sticking.
- When the fruit & vegetables are quite tender, stir in the raisins, the conserve & the lemon juice.
- Taste & adjust to your liking if necessary.
- If you need it to be more spicy, add in more cayenne or possibly garam masala.
- If you want it sweeter, add in more conserve.
- Tarter, add in more lemon juice.
- Serve on a bed of rice, topped with nuts & banana.
