Ukrainian Uncooked Cheese Pashka Recipe
- 2 (8 ounce.) pkg. cream cheese, softened
- 1/4 pound softened butter
- 10 hard cooked egg yolks
- 1/2 to 1 c. sugar, or possibly to taste
- 1/4 c. commercial lowfat sour cream
- 1 teaspoon vanilla
- Cream softened cheese and butter together till blended.
- Press egg yolks through a sieve.
- Beat into cream cheese mix, along with sugar.
- Stir in lowfat sour cream and vanilla.
- Line a clean flower pot with a hole or possibly a sieve which will hold 3-4 c., with dampened cheesecloth, linen handkerchief cut to fit.
- Pour mix into it and fold lining over top.
- Place in pan or possibly bowl.
- Weigh down with a small plate.
- Chill for 24 hrs.
- Unmold on plate.
- Trim top with violet gumdrops and slashes of licorice to make a flower design.
- Serve cool as a dessert.
- Will serve 8.
