Shrimp Scampi
- 8 ounces, weight Whole Wheat Pasta
- 3/4 cups Margarine
- 1 cup Chicken Broth Or White Wine
- 2 Tablespoons Garlic, Minced
- 1 pound Shrimp, Peeled And Deveined
- 2 Tablespoons Water
- 3 Tablespoons Cornstarch
- 1/2 cups Grated Parmesan Cheese
- 1 teaspoon Cajun Seasoning
- 1 Tablespoon Parsley, Chopped
- In a large pot, boil some water and cook pasta according to package instructions.
- Meanwhile, melt butter/margarine in a saucepan.
- Add chicken broth or white wine.
- Add garlic and cook until tender.
- Add shrimp and cook until pink.
- In a small bowl, combine water and cornstarch until well mixed.
- Add to shrimp mixture and stir well.
- Add cheese and stir until melted.
- Serve shrimp mixture over pasta.
- Top with Cajun seasoning and chopped parsley.
