Quick Chilaquiles
- 2 to 3 cups gently crushed tortilla chips
- 2 cups enchilada sauce, a mix of salsa and tomato sauce, or plain red or green salsa
- 1 cup shredded cheddar cheese
- Sour cream (optional)
- Avocado (optional)
- Put the chips into a frying pan over medium heat.
- Pour the sauce over and cover the pan.
- Simmer until the chips have absorbed some of the sauce and softened, about 5 minutes.
- Sprinkle the cheese over the top and cover again for a minute or two, just until the cheese is melted.
- Scoop out with a spatula onto your eggs.
- Serve with tortillas if you have some.
- In fact, if you dont have any tortilla chips, you can use tortillas instead.
- Cut them into strips and fry them in oil until brown before adding the sauce.
- Top with sour cream if you have it.
- Or avocado.
