Bacon & Cheddar Potatoes
- 6 slices bacon, cut in 1-inch pieces
- 1 white onion, chopped
- 2 lbs yukon gold potatoes, thinly sliced
- 2 tablespoons butter
- 1 cup old cheddar cheese, shredded
- 12 cup sour cream
- 13 cup chives, chopped
- 12 teaspoon salt
- 12 teaspoon black pepper
- Cook bacon in large skillet, over medium heat, drain on paper towel, drain fat except for 3 tablespoons.
- Add onions; cook 5 minutes, add potatoes, cover.
- Cook over medium low heat 20 to 25 minutes, or until potatoes are tender, stirring occasionally.
- Add butter, cheese, bacon, sour cream, chives, salt and pepper to skillet, toss to coat.
- Cook until heated through about 4 minutes.
