Bacon & Cheddar Potatoes

  1. Cook bacon in large skillet, over medium heat, drain on paper towel, drain fat except for 3 tablespoons.
  2. Add onions; cook 5 minutes, add potatoes, cover.
  3. Cook over medium low heat 20 to 25 minutes, or until potatoes are tender, stirring occasionally.
  4. Add butter, cheese, bacon, sour cream, chives, salt and pepper to skillet, toss to coat.
  5. Cook until heated through about 4 minutes.
