Citrus Pepper Mold

  1. Stir boiling water into dry gelatin in large bowl at least 2 minutes until completely dissolved.
  2. Add cold water, lemon zest and juice; stir until well blended.
  3. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves definite impression).
  4. Add peppers and onions; pour into 5-cup mold.
  5. Refrigerate 4 hours or until firm.
  6. Unmold onto serving plate.
  7. Store leftover gelatin in refrigerator.
