TXS's Style Kabocha and Kale Baked
- 1/2 Kabocha, seeds removed ~ sliced
- 1 tbsp Olive oil
- 1 Kale, chopped
- 1 Yellow bell pepper, sliced
- 1 tsp Olive oil
- 1 tsp Smokey paprika, ground
- 2 tbsp Balsamic vinegar
- 1 tsp Ginger, ground
- Heat oven 400
- In a bowl place squash and add oil, toss and place in baking dish
- In the same bowl add kale, vinegar, seasoning and toss with remaining oil
- Place on top of squash, cover with foil and bake for 60 min
