Green and Yellow Bean Salad

  1. Bring 3 quarts lightly salted water to a boil over medium heat.
  2. Blanch beans separately until crisp-tender.
  3. Immediately plunge beans into ice water, drain and set aside.
  4. Whisk remaining ingredients together and toss beans with dressing to coat.
  5. Let marinate for 1 hour.
  6. Serve garnished with fried shallots, if desired.
