Sea Shell Chowder Recipe
- 3/4 c. minced onion
- 1 clove garlic, finely minced
- 3 tbsp. butter
- 4 c. light cream or possibly lowfat milk
- 2 tbsp. minced parsley
- 1 1/2 c. (6 ounce.) shredded Cheddar cheese
- 2 (6 1/2 ounce.) can clams, undrained
- 1/2-1 teaspoon salt
- 1/4 teaspoon pepper
- 1 (7 ounce.) pkg. creamette shells, cooked as pkg. directs & drain
- In large saucepan or possibly Dutch oven, cook onion and garlic in butter till golden brown.
- Add in remaining ingredients, except shells; cook over medium heat, stirring till soup is warm and cheese has melted (don't boil).
- Stir in cooked shells; heat through.
- Makes about 2 qts.
