Low-Fat Black Beans And Rice

  1. Heat oil in skillet on medium-high heat, add onions, pepper and saute until tender.
  2. Stir in rice and next 3 ingredients.
  3. Saute 3 minutes.
  4. Add beans and tomatoes, cook 3 more minutes.
