Chopped Vegetable Salad

  1. Combine watercress, parsley, celery, onion, tomatoes, radishes, beans, avocado, chick peas and capers in a large bowl.
  2. In a small bowl, whisk together lemon, orange and lime juices, sugar and oil.
  3. Stir in mint.
  4. Salt and pepper to taste.
  5. Toss with salad greens.
