Creamy Spinach & Carrot Soup Recipe

• 3 tbsp. butter
• 1 c. minced onions
• 2 tbsp. flour
• 1 c. half & half
• 1 can chicken broth
• 1 c. shredded carrots
• 10 ounce. frzn spinach, thawed

1. Saute/fry onions till tender in butter.
2. Stir in flour (smooth and bubbly) 1 minute.
3. Stir in half and half an broth.
4. Add in remaining ingredients and continue cooking over low heat for 12 min.
5. Add in healthy pinch of salt, pepper and nutmeg.
