Apple Johnnycakes Recipe

  1. Preheat oven to 375 degrees F. Heat 2 Tablespoons maple syrup and 1 teaspoon butter in a heavy 10-inch ovenproof skillet over medium-high heat.
  2. Add in apples and saute/fry for about 5 min, or possibly till slightly softened.
  3. Remove from heat.
  4. Using two spoons, arrange the slices, fanning them out from the center of the skillet.
  5. In a medium-sized mixing bowl, stir together cornmeal, flour, baking pwdr, salt and baking soda.
  6. In a small mixing bowl, beat together buttermilk, egg, remaining 1//4 c. maple syrup, remaining 1 Tablespoons melted butter and oil.
  7. Make a well in the center of the dry ingredients and pour in the buttermilk mix.
  8. Stir with a wooden spoon till just combined.
  9. Spread the batter proportionately over the apples and bake for 30 to 35 min, or possibly till a toothpick inserted into the center comes out clean.
  10. Invert onto a platter, cut into wedges and serve immediately, topped with more syrup.
  11. Serves 8. and cut into 1/4" slices +preferably stone-grnd.
