Tuna Crusted W/Wasabi Peas

  1. Cut each steak in half.
  2. Wash and dry them well and wrap in plastic wrap tightly.
  3. Place in freezer for about 45 minutes.
  4. Mix the egg and milk together.
  5. Crush the peas with a mortar and pestle until they have the consistency of coarse salt.
  6. (I used a rolling pen and rolled it over the peas in a plastic bag.

  8. Unwrap each piece of tuna.
  9. Coat it in the flour, then dip in egg/milk mixture, then roll in the crushed peas.
  10. Place on a plate and allow to rest for 10 minutes.
  11. Preheat a heavy cast iron frying pan on low heat.
  12. After the 10 minute resting period of the tuna, add 3 tablespoons of oil and turn the pan to high heat.
  13. Allow to heat about a minute then add the tuna.
  14. With heat on high, saute tuna 1 minute on each side, including the sides.
  15. Serve immediately.
