Jumbo Blueberry Muffins/w silk milk

  1. Mix together all Dry Ingredients
  2. Add the wet ingredients next....Beat on high for 1 min until silky smooth.
  3. Add the Blueberries.
  4. And mix them in with the mixer for 30 seconds.
  5. Just enough to break the Blueberries up a bit.
  6. Prepare the streusel mix topping by mixing it together with a fork
  7. Grease the jumbo muffin pan with pam.
  8. Preheat over 400F.
  9. Cook for 20 - 25 min or until topping is golden brown.
