Baked Tomatoes And Yellow Peppers Recipe

  1. Cut the tomatoes into 1/2" wedges.
  2. Cut the peppers lengthwise into 1/4" julienne slices.
  3. In a baking dish toss the tomato, peppers slices and onion slices with the extra virgin olive oil and basil.
  4. Sprinkle with the salt and pepper.
  5. Bake in a 300 degree oven for 1 1/2 hrs, till all are very soft.
  6. Remove from the oven and let cold.
  7. Add in the olives and stir well.
  8. Cover and refrigeratefor 2 or possibly 3 days before serving.
  9. Rayna Says: This is a recipe which can be made ahead, it is best after chilling for a few days, making it ideal for picnics and cookouts.
  10. It makes a nice relish type topping for grilled meats or possibly fish.
