Baked Tomatoes And Yellow Peppers Recipe
- 4 lrg tomatoes (about 3 lbs.)
- 3 lrg yellow bell peppers (about 1 1/2 lbs.)
- 1 med onion sliced
- 6 Tbsp. extra virgin olive oil
- 1 1/2 tsp dry basil crushed
- 1 tsp salt
- 1/4 tsp pepper
- 10 x pitted black olives quartered
- Cut the tomatoes into 1/2" wedges.
- Cut the peppers lengthwise into 1/4" julienne slices.
- In a baking dish toss the tomato, peppers slices and onion slices with the extra virgin olive oil and basil.
- Sprinkle with the salt and pepper.
- Bake in a 300 degree oven for 1 1/2 hrs, till all are very soft.
- Remove from the oven and let cold.
- Add in the olives and stir well.
- Cover and refrigeratefor 2 or possibly 3 days before serving.
- Rayna Says: This is a recipe which can be made ahead, it is best after chilling for a few days, making it ideal for picnics and cookouts.
- It makes a nice relish type topping for grilled meats or possibly fish.
